The 2012 HSI Modern Apprenticeship Programme - Cookery, Level 3

HSI has made a number of changes to one of its flagship products, the Modern Apprenticeship in Cookery, Level 3. This Information provides a brief overview of the new programme.

Modern Apprenticeship in Cookery, Level 3
The programme has a duration of 18 months. Upon successful completion, graduates will receive the National Certificate in Hospitality: Cookery, Level 3.

The programme is centred around on-job training, complemented by a series of four workshops held off-job. The on-job training allows apprentices to learn and develop their skills by applying new skills repetitively in the workplace, honing their ability to a high degree. The off-job component provides an opportunity to see new ways of doing things, and meet other apprentices.

Learning is also supported by an on-job training plan, which will outline the skills the apprentice needs to learn, and when they need to learn it by. There is also a series of cookery textbooks to refer to and use when learning.

An external coordinator will support and check the apprentice’s progress. They will visit the workplace at least once a quarter, to talk to the apprentice and employer, and ensure they are on track to achieve their training plan.

The cost of the programme is $2087 + GST, about $134 inclusive per month. This includes quarterly visits by the regional MA Coordinator; all textbooks; assessments*, and four off-job workshops.

*Does not include costs of re-assessments if required

Why become a Modern Apprentice?

  • You learn as you earn – you are  learning a trade while earning wages , so you do not have to have a student loan.
  • To achieve a nationally recognised qualification – this is the same qualification as that offered at ITP/PTEs (similar off-job programmes cost up to $5000).
  • You begin your training as soon as you sign the HSI apprenticeship training agreement form.
  •  There is no need for lengthy study periods away from the workplace – you learn on the job.
  • You learn in an environment you are familiar and comfortable with – your workplace, under the guidance of your experienced chef/s.
  • You learn at your own pace – you can finish earlier than 18 months.
  • You attend a series of workshops where you will learn new skills and meet other apprentices.
  •  There is an affordable payment scheme.
  • When you have achieved your Level 3 qualification, you can consider going on to the next level – National Certificate in Hospitality: Cookery, Level 4.

When does it begin?
The new Level 3 programme will start from March 2012. Apprentices can sign up from December 1, 2011. However, please note that the workbooks and assessments will not be available until March 2012.
