Working together to guide the future

Since the announcement in March that the Aviation, Tourism and Travel Training Organisation (ATTTO), the Hospitality Standards Institute (HSI) and the Retail Institute were entering into a due diligence process for a potential merger much progress has been made.

Requests for proposals (RFPs) have been completed and a contractor has been engaged. BDO Wellington is currently undertaking the due diligence covering the financial implications and the benefits to customers and key stakeholders. The report is due to be completed by the end of June.

The co-founder of London’s successful Feng Sushi chain of
restaurants, Silla Bjerrum, claims that sustainability is not so much a
moral option for restaurants, as it is essential for the health of their
business. She was speaking after winning a Sustainable City Awards Green Gong for her company.

From the traditional to the new

Since joining HSI, I have familiarised myself with our operations, clients, key stakeholders and current arrangements for supporting training, and compared these with my knowledge from working as a consultant to a number of businesses and other industry training organisations.

In my recent visits to HSI clients in New Zealand and to our counterpart organisation in Australia (Service Skills Australia), I see that there are two key areas in the business of training where the hospitality sector is clearly behind others in how we operate.
Managing slow or lazy staff

You know they've switched off, but what will you do about it?

Someone
who takes an hour to do what others fix in 20 minutes, then disappears
for a cigarette; or the one who can't move from behind an empty bar to
help clear dirty tables.

It's aggravating to managers and the other staff who carry them, and may
be the reason why good staff leave, especially if they think you
tolerate laziness that makes their work harder.

Literacy training spells success

For food manufacturer Hansells, improving workplace literacy and communications training was about becoming a more efficient and competitive company.

Site operations manager Rory Garvey said the company recognised that it would make better progress introducing a Lean manufacturing process if it helped frontline managers to improve their skills. Lean manufacturing aims to optimise production efficiencies while maintaining quality.

Update on HSI’s Modern Apprenticeship Programme for Cookery

HSI has made a number of changes to one of its flagship products, the Modern Apprenticeship in Cookery. The new Level 3 programme starts from this March. It centres around training on the job, and is complemented by a series of four workshops held off-job.

The on-job training allows apprentices to learn from their chef and develop their skills by applying new skills repeatedly in the workplace, honing their ability to a high degree. The off-job component provides an opportunity to see new ways of doing things, and meet other apprentices.
Kiwi takes McDonald's reins

Move aside, Ronald McDonald: Patrick Wilson has become the first Kiwi to head McDonald's New Zealand operations in 21 years.

Wilson's ascent to the managing director spot at McDonald's began 27
years ago as an 18-year-old behind the counter of Auckland's Queen St
store.

"To start off as a crew-person when I was just 18, and to now be
appointed to run the New Zealand business, has been a remarkable journey
full of opportunity," Wilson said.

A competition to add spice to the first school term is open for cookery students in Year 12 or 13 who want to be a chef.
