Certificate of Achievement packs (COAs) for schools are short course training packages containing approximately three or more unit standards over a range of Hospitality Domains.

Certificate of Achievement Pack (COA) Cookery Schools 1 (Level 1) Ed.6

This COA covers Unit Standards at Level 1 around food hygiene and safety, preparing and presenting meat, fruit and vegetables and egg and cheese dishes in the hospitality industry.

Certificate of Achievement Pack (COA) Cookery Schools 2 (Level 2) Ed.5

This COA covers unit standards at Level 1 about food safety, handling knives, cook food by grilling and prepare and present salads. 

Certificate of Achievement Pack (COA) Cookery Schools 3 (Level 1) Ed.6

This COA covers unit standards at Level 1 about demonstrating knowledge of knife care, use, storage, preparing and presenting hot finger food, sauce and soup, and cooking cake, sponge and scones in the hospitality industry.

This COA covers unit standards at Level 2 about frying, roasting, preparing fruit and vegetables and preparing and presenting basic sandwiches in a commercial kitchen.

This COA covers unit standards at Levels 2 & 3 about food safety, baking in a commercial kitchen and demonstrating creativity in meal preparation and presentation.

This COA covers unit standards at Levels 2 and 3 about knowledge of the characteristics of commercial cookery methods and thier applications, preparing and planning to serve food for a special occasion and providing buffet service in a commercial environment.

This COA covers unit standards at Level 2 about preparing and serving hot and cold non-alcoholic drinks, clearing areas for service, basic table service and maintaining personal presentation and greeting customers in a commercial environment.

This COA covers unit standards at Level 1 about knowledge of glassware types and uses, knowledge of alcohol beverages, providing wine service and preparing and presenting mocktails in the hospitality industry.

Certificate of Achievement Pack (COA) Coffee Appreciation (Level 2)

This COA covers unit standards at Level 2 about basic coffee methods and techniques. Topics covered are: espresso beverages, pressed and filtered coffee, brewing, machinery and equipment and serving.
